
This recipe was our Christmas morning breakfast when I was a kid. It’s such an easy recipe that I originally wasn’t going to make it but guests love it as much as I do. I will sometimes add onions or red peppers to this recipe if I want it to be a little healthier.
Ingredients
2 eggs/person
1 – 2 slices of bacon/person, chopped into small pieces (bacon can be precooked but raw works better)
¼ – ½ cooked potato per person – chopped into medium size chunks (I use leftover home fries but you can also use left over baked potatoes or microwave a potato until just about cooked)
Salt and pepper to taste
1 Tbls cooking oil (if not using raw bacon)
Directions
Heat a large frying pan or wok. Add the bacon or oil (if bacon is precooked). When the bacon starts emitting grease add the potatoes and cook until the potatoes are browned and the bacon is cooked. Scramble the eggs in a bowl and season with salt and pepper. Pour the eggs on top of the potatoes stirring regularly until cooked. Serve right away.
